This restaurant specializes in the Okinawan native breed of pork known as Agū, a premium pork raised on the restaurant’s own farm. The “Matayoshi Agū” is specially bred to closely resemble the original lineage of Okinawa’s rare native pigs. Agū pork is known for its fine marbling, low-melting-point fat that dissolves in your mouth, and moist, juicy flavor that doesn’t escape during cooking.
沖縄在来豚の地を引くブランド豚「アグー」が味わえるお店。自社で肥育した「又吉アグー」は、希少といわれる沖縄のアグー豚の原種に近い交配にこだわっています。アグー肉の特長は「霜降り肉で食味が良い」「脂肪融点が低く口の中で溶けるような味わい」「しっとりジューシーで旨味が逃げない」といった、口に入れた瞬間にすっと溶けるような軽い脂の肉であること。

The best way to enjoy Agū is shabu-shabu hot pot. The incredibly light texture spreads flavor with every bite, offering an experience of its rich yet clean taste.
そんなアグーを一番おいしく味わえる料理といえば「しゃぶしゃぶ」。驚くほどさっぱりとした口当たりで、食べ進めるほどに旨みが口の中に広がるおいしさ。


The restaurant also has a meat corner where you can buy Agū hamburgers and cuts to take home. If you’re staying in a condominium, consider buying some to cook yourself.
