Beef Soba and Pipachi:
A Flavor Story from Ishigaki Island

With its emerald-green sea and unhurried island rhythm, Ishigaki Island serves as the gateway to the Yaeyama Islands. One of the first dishes we hope you’ll taste here is gyu soba—a comforting bowl of beef soba noodles long loved by local residents.

At Taira Shoten, gyu soba is a satisfying “best-of-both-worlds” bowl that brings together Yaeyama soba noodles and a rich beef-based broth. Generously cut chunks of beef strike a perfect balance between lean meat and fat, making the dish hearty and deeply satisfying. As the umami-rich soup clings to the noodles, it’s easy to see why the shop fills with both locals and visitors at lunchtime.

Ishigaki Island also serves as a transit point for ferries to other Yaeyama islands such as Taketomi and Iriomote. Before boarding your boat, be sure to pick up Juushi Kamaboko from Kinjo Kamaboko, which is also available at the Ishigaki Port Remote Island Terminal. Kamaboko is made from steamed fish paste and is generally known as a Japanese fish cake. This much-loved local version wraps juushi—seasoned Okinawan rice—inside springy Yaeyama-style kamaboko. Gentle in flavor yet surprisingly filling, it’s perfect for breakfast or a light meal. You can find it from 7:00 a.m. at the main shop or at kiosks inside the terminal.

Quietly supporting these hometown dishes is an unsung hero of island cuisine: Pipachi, a local island pepper. Milder than black pepper and scented with a refreshing, herb-like aroma, Pipachi sharpens the flavors of gyu soba, Yaeyama soba, Juushi Kamaboko, and many other local specialties.

According to local farmers, Pipachi is grown using a unique method in which the vines are trained up concrete block walls. The contrast between warm days and cooler nights encourages vigorous growth, allowing the fruit to hang at an easy height and making harvesting efficient.

Just a light sprinkle of Pipachi over gyu soba or Yaeyama soba releases a distinctly island-style fragrance and deepens the flavor instantly. Finely chopped young leaves are also used to gently scent Juushi Kamaboko. Pipachi truly is an essential spice—one that quietly supports the “flavor of the islands.”

If you’d like to take those memories home with you, look for Pipachi-based seasonings as a souvenir. Each shake of Pipachi powder in your kitchen can bring back the moments, flavors, and scenery of time spent on Ishigaki Island.
